Ahhh I think that's probably the difference.
Going past the click is totally fine for me with an IH and that's where it comes to manual technique.
Same thing happens with torches in that depending on how you use the torch it will heat the cap and the load up differently.
For example if you used a torch only near the tip of any cap the click will typically occur faster before the body of the load has been heated thru and produce lighter vapor and by extension lighter ABV which is sometimes preferred.
If you use a torch and rotate mainly around the body of the cap and stay further from the tip, the main body of the load will be hotter all the way thru before the click occurs and therefore produce thicker vapor with more roasted bud.
Analogously if I use an IH and just go to the first click and immediately remove I will get lighter vapor and ABV which is sometimes preferred.
If I use an IH and go a few seconds beyond the click I can get more of a thorough heating throughout the load and get heavier vapor and browner ABV.
When I want to get 1 heavy hit from my IH I may even use the IH for a few seconds and stop before the click occurs as a little pre-heat of the entire load, then go back in the IH again and let it go a few seconds past the click for a fully thoroughly heated entire cap load to get those big 1-hit rips.
