We like to make Frankenstein Brownies,.. a layer of tainted brownie, a layer of tainted Carmel with or without nuts, another layer of tainted brownie topped with tainted butter-cream frosting.

Vapenstien, how do you make your 'tainted' caramel?
soft and spreadable i presume as opposed to candy like?

i'd like to try and make some tainted caramel candies, sounds yummy.

Herbgirl,
I make a batch of caramel and then I make caramel creme to spread on the middle layer of the brownie.

Caramel
Heat 8 tablespoons sugar into a saucepan until it melts. This will take about 5 minutes.
*Melting starts around the edges.
Continue to Stir the melting sugar with a wooden spoon until it is completely melted.
Keep on stirring for another 5 minutes(ish) until the melted sugar has turned brown.
* It should look somewhat like honey.
****Do not burn it.****

It is time to add the liquid into the mix.
Be sure to remove the pan from the heat, and gently pour in 4 tablespoons of Swampwater/ tincture etc..while stirring.
Let the caramel cool down.

To make a spreadable Carmel Creme add 4 tablespoons heavy cream to the caramel when you add the other liquid
( better yet you can use the slurry mix from my ice cream recipie)

so the one with just sugar/swampwater is more like a translucent hard candy. gotcha.
and then when you add cream to that it makes it softer and flow-ier.

I'm also thinking about using tincture or infused cream to make a soft caramel - like for a caramel apple, soft but not spreadable.
our family and another family are picking 6 or 7 bushels of apples next week for sauce and drying, i'd like to set a few aside for 'special' caramel apples to reward us adults for all that harvesting, prep and slaving over hot applesauce, not to mention canning it all!

perhaps some spiced cannapple sauce might be nice too. mmmmmmmm.
