I prefer Angus cuz I know a number of people who raise that breed, and I know how they treat the animals.

But that being said not all beef tastes the same, though I presume it has more to do with what the animals are fed and how they are exercised than by the breed. But either way, as a former chef and butcher, I can tell you I most certainly can taste the difference between North carolina Angus, Japanese Kobe, and Texas beef. All taste better than most generic US beef.

You make good points...and I'm strictly speaking about the pre-wrapped generic stuff in the meat section. I doubt that your average consumer would be able to distinguish between breeds...especially ground beef. It's a brilliant marketing campaign. FWIW, we hobby farmed Angus brood cows when I was a kid and I did a little food science as a student and worked at a feed lot. If any of you have a soft spot for animals, you would probably be appalled by how your average meat animal is treated.
 
No matter what kind of burger i eat, i want much sauce, mayo or remoulade.
That´s, why i always make up to 50 % joghurt under my sauce. This way it is much more tasty, but not much more calories.

The big mac would taste great, this way, but the normal one is horrible. Totally dry.

The same for croques, sandwiches...

Anyone happen to have any kick-ass vegan burger recipes?

I like a good meaty burger as much as the next guy, but I'm also more than willing to be fooled by an intelligent, well thought-out vegan burger.

Let me just mention that I'm an alcoholic trying to lose weight, so.... every calorie counts.

And I will happily trade cheese for guacamole. No issues there.

I've had some vegan burgers at restaurants before, sure, but am convinced that they either grilled them on a flat top grill that was already covered in meat juices, or were briefly deep-fried in oil that real meat (pig bacon / chicken wings) had already been deep-fried in.

Any vegan burgers I've tried to make at home have turned out like... well, vegan burgers. Messy, they fall apart, they taste like beans, and generally make you just wish you had eaten a salad instead.

Let me make it clear: I am not some namby pamby vegan; I love a real burger as much as the next guy. But I also (sometimes) accept reality. And the reality is, we Americans have to eat less meat. IMO.

Have tried multiple internet / vegan cook book recipes. They all suck infant shit. Need real-shit advice.

Am honestly and seriously looking for help here. :ugh: And would love to include any vegetarians / vegans in this fledgling thread.

buffalo good. i only get it on occasion due to cost, more flavor requires less messing with.
When I make a burger at home it's with ground bison, a loose patty pan-fried or on the grill. Just s&p on the meat, topped with a saute of caramelized onion, with chopped roasted garlic cloves and banana peppers, and a slice of swiss. Pretty simple but add some mustard and you've got heaven on a bun!

I used to be a spa chef and I agree, the pre-made vegan burgers generally suck ass. If a decent one comes along they get bought out by the suckass companies and then they start to suck ass or they go away.

Forget about "burgers" and think large burger-sized croquettes, that can be finished in the oven. Use cooked beans, from lentils to pinto as your main protein. Then add whatever chopped veggies: always start with plenty of onion, and celery and carrot for a base, mushrooms are great for a meaty flavor. Cook them to taste before mixing with the beans and binder. If you're not vegan egg can make a great binder, otherwise try baking some squash and puree it.

The main thing is to get the texture right, and then brush with some healthy oil and cook in a hot oven. Forget about frying or grilling them. One of my favorite tricks back then to change up the flavor was to puree choice but useless leftovers with whatever I was using for the binder.

If you want a nice vegan burger you can throw on the grill at a bbq, get some big portabello mushroom caps and give them a quick soak in some italian dressing first.

I was playing in a sports tournament in Amsterdam and they had a welcome party with special local treats. One was a raw ox meat mini patty with a small pickle on the side. It was actually very good.
Anyone else ever have ox?

I've had Five Guys now.... :)

They do a great no bun burger! and their fries are amazing... but, back to the burger. Wow.

I really like my burger, at home, mixed 50/50 with liver (food processor), and cooked with a huge amount of diced onions, garlic, and as much mexi-spice I can gather. For a great dinner, stir in a whole bag of Trader Joe's mixed power greens, or baby kales & chard, and cook until wilted.

This can be a base for taco salad, taco filling, burritos, or served over baked sweet potatoes (to die for), or even mix up the seasonings, throw in some red chili paste and a can of coconut milk, a POW, you have curry.

We get the grass-fed ground beef patties at Trader Joe's, and those are great with bacon on them. Cheese too, if you can handle the dairy (I'm abstaining from dairy for now).

Ground up, and grilled till it's medium throughout. Then to top it off a nice slice of boars head cheddar jack cheese, lettuce, homegrown tomatoes, sauteed mushrooms, applewood bacon, guacamole, and a bakery fresh bun toasted to perfection.
