Good choice with the whole smaller beaker/shower head combo. IMO that combo is super under appreciated and often overlooked in lieu of "MAD PERCZ BRO!!!1111!!!11!1". With it you'll be getting an awesome combustion and vaping piece that will be super adaptable to your needs.
If you're super concerned about ash chillin in the downstem, I would say your options are getting a carbon filter, getting an ash catcher, using a screened or semi-screened bowl or just getting used to it. Any showerhead you buy will have problems with keeping at least some of the shit you snap down there in the perc. Alex K's do a pretty good job with the size of there slits, but no down stem is immune. I really can't comment on the OGB showerheads, but their customer service is awesome so you could probably email them and ask your questions directly.
Also, not sure if this fits the bill, but there is a nice cheap HVY beaker in the classifieds right now that comes with a couple of downstems. You could get that and then decide what your opinion would be on a showerhead. I've had that style HVY beaker before they are nice and simple and well made. The joint is a little peculiar, but sorta nice because it's so low profile and works well.

Go with the OGB. Same function and cheaper man! Also check out the rezblock forum and buy some cranberry extract for your beaker. 3 drops a day and your piece will build so much less resin. That is the best one. Don't go off that brand man. And no it doesn't. Maybe a hint of cranberry the first two rips but its gone after that. I kid you not it will keep your glass crystal clear. Better than grunge off, rubbing alcohol, or any of that

I have no idea what I just read.Really?!
