Quite honestly I've chucked all of my Stainless (and a carbon) steel kitchen cutlery for Kyocera ceramic units (Black ceramic) sans things used for boning/prying... ceramic is super hard for chopping and slicing, but fragile if you try to flex it.

Ooooh, nice. I've owned a couple of ceramics, but only one Kyocera. Chipped it on a bone, but before it broke it had some amazing action, really smooth French knifing. Really need to get another one.

Keeping with the theme, here are some shots of an antique Mongolian Buddhist blade, with some sutra inscriptions.

And now shots of the antique Thai buddhist blade, much larger than the Mongolian one, but more practical (no fancy silver scabbard, just plain wood). This one was made by the royal Thai sword makers, no way I could have gotten it without the generosity of a fellow Buddhist. There are multiple shots so the blade inscription can be better seen. IMHO, high-grade blades just don;t translate to digital media well - these and the later wootz blade pics don't do justice to the reality, even though shot with a very good Cannon DSLR and Sigma macro lens. May bust out my film camera and do some that way.

And now the Kremlyn / Kirpichev wootz blade. Only other guy I know of who can do this, the real deal, not patter-welded or acid-etched, is Al Pendrey. Been trying to get one of his for years, no luck so far. Recent research has found natural carbon nano-tubes in real wootz (or bulat in Russian), as well as vanadium, allegedly an ingredient in both dudes recipes.

I have a set of Wusthof Grand Prix knives that I love. I bought the entire $500 knife block set many moons ago and added a Sontoku . . . The reason I bought them? Quality, and the handles fit my hands perfectly. The same way my first Sig Sauer P225 slid right into my palm. You just know . . . ;)

Second was a real score- the smith had made this custom 14mm steel punching buckler for a dude who then didn't have the money to pay it off. So I got it mad cheap. May be the my best battle-ready piece.

I came to my senses and sold the Miyabi knives while they still had value. I tried some others that I’ve since sold off. Here's where I'm at now with a long way to go:

My friend is a high end collector and I love it. I get to look and handle his collection an never have to worry about losing, breaking or marring any of them like I do with my working knives.

That's awesome, I completely understand where you're coming from. I wish I knew a collector or two. I don't bring some of my knives to work which makes them (somewhat) impractical. They don't deserve the abuse!

I'm holding off on nicer purchases until I complete my work set, then I will get back into collecting. I have a wish list over 50 knives long...

I recently had to start from scratch on kitchen knives so I decided to go with made in the USA Cutco knives. Backed by the forever guarantee with free inspection, sharpening, and washing whenever I want. I especially love the Double-D recessed edges. These knives have unique edge configuration: a three-way cutting edge with a concave grind. They are designed to stay sharp for many years.

I think my roommate has that same Cutco set with the exception of the steak knives and the shears. I'm jealous of those shears- those things look beastly!

OTOH I'm not a huge fan of the actual Cutco knives. My gripe with them is that I don't find the ergonomics that great- the handles are uncomfortable and the cutting angles are a little strange. Like why does that 2nd from the bottom knife have a handle twice as long as the blade? And the one above that (3rd from bottom) has such a narrow blade it's really hard to cut stuff all the way to the cutting board (you smash your fingers before completing the cut). Only way I've found to effectively use it is to have your bread or whatever on the very edge of the cutting board (and then you scatter crumbs).

Anyways hope you enjoy- they are certainly durable knives.

Sent my 10 year old set in for sharpening during my last vacation and they straight up replaced half of it including their dope ass scissors. Best scissors i ever tried.

I also asked them to add a serrated edge to one of my paring knives that had a flat blade edge. They did it.

Because its a pairing knife and its better for safe control. Usually I pinch my knives at the base of the blade so extended handles help keep things in balance for me and afford greater control when I wish.

That is not a bread knife. Its a trimmer or Cutco's version of the utility knife. This is your go-to knife for prep work and will help you get fast, professional results. Slice fruits and vegetables, cut corn off the cob and trim fat from steaks, chops and roasts. Every feature from the tip of its Double-D edge blade, through the full tang and to the bottom of its triple-riveted, ergonomic handle pleases me no end.

Heh. Worked for Cutco for a couple weeks a long while back. Typical multi-level marketing bullshit. They insisted I set up my first appointments with people I grew up with/were familiar with so I could build a referral system by selling them knives and then glomming onto whatever contacts I could squeeze them for.... Bleh.

Yeah thats Vector Marketing, very typical like you say, but the knives are incredible. I got mine at Costco.
