Good idea about the double seal. My sealer has a pulse button so I can control the amount of vacuum and, to some extent, the liquid problem. Also, molybdenum magnets work great for holding the bag to the bottom of the pot so it doesn't float. Any way you look at it, sous vide is here to stay...
