safe stainless steel soldering iron?

Hey I was wondering what soldering irons if any, have an all stainless steel barrel/heater cover. Are there stainless steel tips too? I'm not sure I trust having the ceramic heating element come in direct contact with the air flow, but it'd be nice to have their quick heat up. I'm looking to make something like 2clicker's design except stainless steel and maybe glass if it'll fit.

so i was checking out some of these heater cartridges that look very similar to the ceramic heating elements in hakko irons.

i know the hakko 456 has a 6mm OD ceramic element that runs 60 watts. Could i find one of the cartridge heaters at similar spec and just swap it out? or how would i go about using these cartridge heaters?

for example what could i do with this
