thinking of getting an underdog to replace my aging rockzap, to anyone who has both, do the rockzap stems fit in the underdog (core mk2)?

Yes. My Ceramic Rock Zap (CRZ) stems fit the latest Underdog core (mk2).
Also note that Underdog switched over to a stainless steel stem tip without a crimp on the nylon stems, to allow for adjustable screen placement. I find that this new modification allows for an easier draw with less restriction.

I use my ud stems with my heat island log vape, too. Yes, I do like that I can adjust the depth of the screen
