Once I found a couple joints that were at least 2 or 3 years old. They were turrible!!!

Smoking flower has very different rules than vaping flower, to have the best experience. Combusting too-dry flower is terrible tasting and terribly harsh on the lungs (think about what happens when you accidentally combust in a vaporizer). If you want to smoke it, attempt to rehydrate it to an acceptable level. Those joints might have been smokeable if the herb was poured out, re-hydrated, and re-rolled.

Vaporizing dry herb can actually be best at a SIGNIFICANTLY drier consistency than smoking dry herb. In fact, some vaporizing methods work best with VERY dry cannabis. So, the OP's herb may be worth trying as-is. However, I don't know if there is a lower level of dryness where vapor starts going back in the bad direction. I'd sugest using the 52% Bovedas for a week or two in a jar before attempting to use.

Are you saying my weed is going to turn yellow early next Summer? Why is that? Is something about California different than places where this doesn't happen? Is it the weather? It didn't happen this Summer with last year's grow, but I might have done something wrong. I'd like to be prepared if something dramatic is going to happen like that. I'd hate to think it is something I'm doing, when it's only the California Effect.

You've never seen crops that are a year old (or older) that have degraded? I believe the reason for it is called oxidation. Perhaps you are doing something right in terms of storage and preservation if you aren't experiencing anything negative with last years crop 9 or 10 months later. Even still, crops that are well preserved once out of the preservation will break down quicker in light and air.

What I'm saying is it can happen to cannabis anywhere that isn't properly cared for whether it is sitting in a turkey bag by the pound or whether it has been broken out into 1/8ths on a store shelf. I experienced it first via turkey bag in Cali and saw it again in Maine with every strain on the shelf because it wasn't selling fast enough in bags that were poorly sealed that had one side open to light. It is a cannabis specific phenomenom, not region. There's just so much weed in Cali that I would say it is more common there but I'd bet that Oregon is not far behind these days. My guess is the dispensary I encountered it from in Maine has patients that come in for one visit and see the quality and go somewhere else to procure their flowers, I didn't go back myself. Luckily there is competition in the markets.

It is like with wines.
Some stuff keeps getting better and some stuff gets stale or even bad.
Most cannabinoids do not degrade that fast.

Ah, I keep my stuff out of light and air. Don't use turkey bags for storage. Have only seen green weed at dispensaries , but don't get there much, having enough at home. I have heard about oxidation, same as most people. I don't know that Californians are any worse at storing than anyone else, but thank you for clearing up that it's specific to weed, not region.
Actually, I never have seen degraded weed. I will be on the lookout, though. I might just need to vape more, faster, and give more away to avoid it happening.

I need to even vape less and give less away to not see degraded weed. I more have the problem that it doesn't really get to cure before its vaped.

Not about my stale flowers but until recently I didn't look at the date on the flower I get from the dispensary. When I did I noticed that all the flower from one of the stores were close to a year old. They were fine but still older than another dispensary I use. I always assumed all the flower I bought was fresh.

Depends on how it was cured and stored. A year is still fresh if properly cured and properly stored.
