Coconut Oil Freezer Fudge

A new recipe I've been playing with. Good with or without herbal additives ;)

Recipe can be made in smaller increments.

2 cups Virgin Organic Coconut Oil (Infused if you choose)
2/3 - 1 cup Cocoa Powder or Raw Cacao (Depending on how chocolatey you want to go)
1/3 cup Honey or Maple Syrup

Optional additives I've experimented with: Chopped walnuts - Peanut Butter

**If you infuse your coconut oil - cool it down in the fridge before proceeding with recipe.

Take cold coconut oil and use hand mixer or standing mixer to beat until fluffy scraping bowl as needed (2-3 mins).

Add cocoa & honey (if adding peanut butter = add now - 3 TBS or so) beat another couple mins until mixed thoroughly.

If adding walnuts fold them in with a spoon gently.

Spread mixture in an 8x8 or 9x9 pan lined with parchment or foil. Place in freezer.

When it is set you can pull from freezer and chop it into 1" squares. *STORE IN FREEZER. A great way to cure sweet tooth, add coconut oil to your diet and oh yeah - medicate if you so choose.

I have infused coconut oil with herb and it's a PITA to strain - you may choose not to strain if you'd like. My new favorite way is to make an Everclear extraction - then reduce it on stove like a sauce to get rid of the alcohol. When alcohol is about gone add the coconut oil and gently heat/stir to incorporate.

I recently tried something like this except I used butter in place of coconut oil. I infused 4 tablespoons of medium strength cannabutter with 3 to 4 grams of bho, double boiled the chocolate, mixed it all together and froze into 12 doses using a muffin tin. it came out a tasty fudge consistency, and works amazingly.

My friend and I went a little crazy taste testing it, we made a bunch of mocha coffee :p ended up being 2 discs worth each of the fudge, WOW!

I cant wait to try with just half a disc, im pretty sure ill still be toasted.

This sounds great! My body wont tolerate cows dairy at all (and limited amounts of other animal dairy) so I love the coconut oil option :). Thanks for sharing!
