well obviously its going to dry out a bit from grinding. Is this a bad thing? It really depends. Shouldn't be an issue if you use within a few days. I only grind as needed though. Usually grind as much as I usually use in day the night before.

Just wanted to point out that mason jars are fine for this and so are other jars. I wouldn't try it with just any jar, it could break and then you'll have a mess of problems.
