Ooooh, nice. I've owned a couple of ceramics, but only one Kyocera. Chipped it on a bone, but before it broke it had some amazing action, really smooth French knifing. Really need to get another one.

First beef from the smoker- a brisket in the rub from an award-winning carpacio from a restaurant I was sous at. If it was a little fattier could've made pastrami from it. Just a little too lean. Rub includes black pepper, garlic, herbs de provence, and tarragon. Smoked in mesquite.

Got a hold of some decent shrimp, so I made shrimp and grits. Homemade bacon, andouille, white whine, garlic, lemon, dill, old bay, butter, little bit o the freshly-made bbq sauce. Grits full of butter and gruyere.
So did madeira-maple dry bacon mark III. Much better than mk II. Have wet-cure madeira bacon mk I in the brine for another day.

Damnit, damnit, damnit. Overcooked the new batch of bacon. Still getting to know the smoker (only 2nd time using it). The shoulder is turning out fine, but at the higher temp the bacon overcooked. $60 of pork and curing materials.
Still tastes good, but it's a fully-cooked, cured pork belly...
This is a little odd. Scallops with grits instead of shrimp with grits. Could not find ANY fresh shrimp in my part of MD (isn't that sad? Chesapeake Bay is all fucked up), but found some beautiful scallops. So fuck it.

That's what I'd think. Except it started mid-session with no drop or bump. Can the bamboo crack spontaneously? Or be cracked for a while but only start overheating days later?
The vapables are all scorching. Tried 4 different strains that normally need different temps to produce visible vapor, all spewing white vapor and scorching after one pull.
However, the bamboo is not getting glowing hot, nor is the light staying red. It's just getting crazy hot.
