I think he mostly does that to let people reserve stuff, there are already a lot of complaints about missing drops. But you are totally right that's a good way to figure out demand and partially fund everything.

All of the 4 piece grinders I have used work exactly the same without the kief screen section. Although I suppose it depends on what grinder you are buying. You could also ask the manufacturer if you can't tell from the pictures.
