Not entirely clear what you are describing. Are you measuring temp with an external thermometer and finding that it doesn't stay steady? If so, I'd contact customer support, which is very responsive. In my experience the Switch heats up so quickly that I don't worry about any sort of preheat...

It would be the Flower Mill, but largely because I'm taking you literally. It has the multiple grind plates AND the ability to convert from 3 to 4 piece. And grinds great.
