You're correct. Although the amount of oil left over clinging to the weed is very minimal. I would include it but I think that infused oil lasts longer without plant matter in it. Well at least for me as I don't refrigerate it. Then again, I never really experimented since I only make about 3.5...
Because the actual weed left its goodies in the oil during the infusion. I once kept the leftover grinds after straining and mixed them with peanut butter. Didn't feel a thing as expected since the THC and terpenes are infused in the oil. Some people also have trouble digesting plant matter.

I wonder if it's the plant matter or coconut oil. Some people unknowingly have allergies to coconut oil which is commonly used....although I can eat shredded coconut and not have any problems.
BTW, I should have noted above... the water you add to the crockpot should be boiling. It will gradually go down to the desired temp range. If you add in lukewarm water, it could take hours for it to get up to the proper temperature.
