but I'm "new" to Quebec and it's not in my culture!

Happy Thanksgiving from Vancouver! I am not overly keen on turkey, but if you are going to roast it, this is an excellent way:
Spatchcocked Roast Turkey
It is ready in 80 minutes (!) and results in crispy skin and juicy breast meat.
