Cannamels, Melt in your mouth Canna-infused Caramels

G'day FC

Gotta a great recipe for Caramels that will plaster a grin on your face for hours.

Please go low and slow regarding edible consumption, they can be very very strong.

-1 Cup of Cannabutter, or infuse 1-3 grams of concentrate into butter.(BE CAREFUL -know your tolerance *3 grams of oil to one cup of butter is going to be quite powerful ) using double boiler method.

1 Cup Brown Sugar
2 cups white granulated sugar
1 Cup corn syrup
1 pint of heavy whipping cream
1 cup Evaporated Milk
1 Teaspoon Vanilla extract

**Note, If using concentrate, you can infuse into the milk, cream or syrup or butter.** basically anything with high fat content.
It will partially decarb while melting and will finish decarb while bringing the mixture up to temp.

Mix everything together except for Vanilla Extract in a saucepan...

You will need a candy thermometer.

Bring mixture up to 250F, whilst stirring constantly, this will take about 30 ish minutes, things start getting really sticky around 220F, don't panic, it should loosen viscosity as the temp reaches 250F or a bit higher.

Remove from heat, dump in your Vanilla extract and stir in...

Pour mixture into a cookie sheet lined with parchment or everything will be huge sticky mess.

Let cool, enjoy.

Now, dosing will be determined by tolerance and how potent your Cannabutter/Concentrate is.

I would highly suggest starting very low, maybe the size of the small Tootsie Roll , and work your way up.

The caramel literally melts in your mouth, and I've found this to be the fastest acting edible I've partaken in.(Most likely due to ultra high fat content and melt factor)

I took a rather large dose my first time (like the size of the BIG Tootsie Rolls)
I was maniacal high, uncontrollable laughter, super psychedelic-like.

I vividly remember because our Washing Machine broke down that day. My cat had a UTI racking up huge Vet bills ( over 2 grand in savings)we were BROKE AF.

My recent philosophy of "It is much easier to laugh than cry at our tribulations "

It was about 60 minutes after ingestion and I was wringing out the water from a bunch of towels that were in the washer when she quit working.

As I was wringing it out ..The "Laughing is easier than crying " philosophy hit me like a rock.
My arthritic hands were throbbing as I squeezed..and there it was....

I busted into a crazy laughing fit, and could not stop...lol:rofl::lmao:

My face was glowing, cheeks red and sore from the permanent-smile.

Enjoy FC!
:peace:

@killick Yeah I was thinking the same. Brownies are my go to. I just try to find some new recipes sometimes and cannamels sound pretty convenient and tasty.

I suspect for those less ambitious folks who would like to try this, you could just melt down Kraft Caramels or such, and add concentrate, being careful to bring up to 250 F for 20 min (?) so that the concentrate decarboxylizes.

Hey Hashtag, this recipe probably wouldn't work out to well with canna-oil, right?
Hello my friend...

Unfortunately, the oil wouldn't work with this recipe, as there is nothing to emulsify the oil into the caramel.

@macbill ..
Great idea!!
I would recommend adding a touch of either the heavy whipping cream or evaporated milk to the melty caramel, this softens the caramel a bit, making it more melt in your mouth like.

If you get the recipe just right, the candy should start melting as soon as it's in your mouth.
Very fast delivery.

Edit; I would also highly recommend to check out a couple different YouTube videos of people making regular caramels, it was very helpful to me to see things visually beforehand.

2) Again, you may want to tweak the recipe so the finished caramels are soft as opposed to hard caramels. (A little extra Evaporated Milk or Heavy Whipping Cream will accomplish this )

Would it be possible to substitute the butter with coconut oil? I realize this will add some coconut flavor, but I personally notice a difference that is substantial when using it compared to butter.

Also, I actually think this will make the caramel a lot' meltier'...

Thanks for sharing this.

And yes one can melt candy bought in the store and just mix it and decarb a such. Did that with chocolate and decarbed absolute once. Ended up with 8 gram little chocolate stars (10 pieces) each containing 0.3g if absolute... I loved them, friends where of their heads from halve.

Be safe with edibles!!! In my experience, If made well, they can give one a full blown psychedelic experience, unlike anything you can experience with other routes of administration.

But I like it!
Coconut oil would probably work fine. I use it 1:1 for butter. You are right about the meltier part... I melted a 70% cocoa bar and added an equivalent amount of coco oil, and had to store them in the fridge in summer. They would tend to melt above winter room temp...

I'm going to give this a try right now. The experiment begins.........
EDIT
=====
Success! I used infused Coconut oil: everything else the same. Takes a while for the liquids to boil out of the mixture.

My candythemometer must be wrong: I ended up with a big Sugar Daddy.

This might help if you want to use bho/qweso/reclaim, and will produce 20 doses of 40mg Thc each (may vary a slight bit due to many factors). Though 2 or 3 doses will really hit hard. Premix a tablespoon of coconut oil heated to about 170-190°F, with a gram of concentrate and maintain the tempurature. Put a pinch of lecithin in a small bowl, dribble just enough warm water in the lecithin to cover the granules, and allow to sit for about a half an hour. While the lecithin is turning into what seems like snot, make sure to mix the coconut + concentrate oil mixture, it should blend very well when at around 170-190°F. When the lecithin has gellified, add a pencil eraser or two amount of the lecithin gel to the oil mixture, mix well. Let it stew at the same temperature for an hour or two. Add all of it to any edible batch to make 20 perfect doses. I have not made your recipe before, but I would simply add it to the 1 cup of butter your recipe calls for (with one less tablespoon of butter than called for, to compensate). Feel free to ask any questions, this method has served me very well many times.

I made a vegan, simpler version of this, with cannacoconut oil, and it worked perfectly.
Ended up with firm, but soft melty caramel/fudge pieces.

I put 250 gr sugar, 100 ml soy cream and 50 grams of cannacoconut oil to a boil with good spoon of peanut butter. Turned down heat and let it boil slowly for about 10 minutes.
Take off of the flame, add vanilla and let cool down to room temp, beat it up fluffy with a fork and put it in a 10x20 cm container to set.
I cut 24 pieces of it, that are slightly too strong lol

So I made a new batch of cana-coco caramels, everybody loved my first batch. I bought a new candy themometer: the old one read low. My first batch turned out too hard. My second batch I poured out too soon, so it was more "thick caramel syrup", or too loose, so I put it back and cooked it until 255 F and now it's just right. I call them my Goldilocks caramels. In 1 oz zip locked bags. Total: 3 lb 11 oz.
