Yeah, the Dave kits are great... If you aren't set on a complete kit then I would suggest getting a low profile adapter from somewhere else to try it out. You just need an 18f to 18f adapter that's shorter than the stock bowl. Get one that's as short as possible.

I would say 500 is a good middle ground to start at, then work your way up or down as to your preference. I tend to stick between 475 and 505, I like a reasonably light roast, definately nowhere near charring.
