    I think the reason is that whenever the material heats up, it may release certain compounds at certain temps. Even though air is breathed through, it is still surrounded by air heated by the coil.

    @StormyPinkness has it right! One extra bit of info: The GS uses a stainless steel cartridge heater that is surrounded by a special copper based thermal paste, all of this is encased in a glass sleeve. New glass bowl makes it 100% glass!
