Help me understand lamb with mint jelly

Queen Elizabeth I had a lot to do with having mint accompany lamb to discourage local eaters from eating lamb or mutton as it helped their wool industry.(The Brits actually made it into law not to eat lamb without mint sauce) however Enterprising cooks discovered that mint made the gamey meat taste better not worse.I used to prep/cook it often for clients. By trimming most of the fat off one can minimize that gamey smell, I would marinate the meat overnight with a garlic/mint wet rub, or use an acid like lemon or vinegar. myself not a fan of mint jelly on the lamb, to each their own.
