Parmesiano Reggiano I've had for awhile??

So I've never splurged on this until recently and have a question and comment:

Great cheese, I'll get more--when it's on sale.

Question: so I wrapped and stored it in the frig. I unwrapped today to add to some noodles/butter/ sea salt/ ground whole pepper and it started to have some "white spots" on it.

I'm more familiar with cheese "blue spots" lol.

The white spots were very thin on surface and very few. Just t be sure I scrapped them off with a
knife blade.
Are they just a part of the Reggi personality OR should they indeed be removed?

All kinds of hard aged cheeses get white spots. The only ones to worry about are if you get some that look splotchy. The small white spots are fine, and often add flavor and texture. Some of them are actually clusters of crystalized molecules. Don't remove them.

Went to farmer's market this morning on an empty stomach.... They have a smoke truck there every weekend. The smell was driving me nuts so I picked up a breakfast sammie..

Well this was frustrating. Went to make pasta for the first time in my new place, made the pasta dough, found the main part of the pasta machine. But the box with its clamp, crank, all of its cutters, and my extruder is missing. Stuff not in my cabinets, can't find any packed boxes other than books. About $500 of pasta making gear has taken a walk. Not sure where my little photo studio for shooting plates of food has gone to either.

So had to hand roll and hand cut. The cutting was uneven cuz I haven't hand cut pasta in years, and don't have a food-safe ruler for straight cutting. Officially it's tagliatelle (ugly tagliatelle) in an aged asiago alfredo. Tasty but ugly.

Colorado peaches peach pie...... this thing took forever to make but it's worth it
CO has the best peaches in the world, sorry rest of the world

Very pretty pie. And CO does have some amazing locally grown and produced foods (I especially like the meats and some of the cheeses). But you really think those peaches are better than Georgia or Carolina peaches? I don't even like peaches (except in bacon cures) but I eat them when I can get Georgia's or Carolina's. I can see them being as good, but I can't really picture better. Never tried peaches in CO- will have to next time I'm there.

I think CO peaches are better than Georgia or Carolina peaches.
There's something about the big temp differences between day and night temps that makes them super sweet and super succulent.
Georgia and Carolina peaches are very good. CO peaches are great.
I wait all year for them and rarely get any others as they disappoint too often.

Just my opinion, like rating cannabis strains. I'd say a properly grown Super Lemon Haze is hard to beat.

EDIT: I could add the same accolades for CO bud. My CO Blue Dream bud mentioned earlier:
top notch. I fact, I confess that I thought I submitted this yesterday.....
