Cooking with Concentrates- Candies?

FlyingLow

Team NO SLEEP!
I am surprised this post got no responses; do you folks only cook with flower?

I don't know much about candies, other than choco, which I make with cocobudder as well as tincture. I find that with tincture you don't really have to treat it as an ingredient. I just add a few eye-droppers-worth to whatever I'm making and it turns out dandy...

So I have made gummies and my friend made hard candies. The key is to decarb the shatter before adding it. I decarb on a double boiler for up to an hour but there are different ways depends on what temp then you adjust the time and oil is easier to decarb because you can watch the bubbles from the co2 escaping. When the bubbles taper off you are at the peak decarboxylation. Anyway so I then absorb the oil into coconut oil and add to your reciepe, and I don't even think the gummies called for it but I just stirred a lot to mix them evenly. Also you can buy empty gelatin capsules and fill them or absorb the oil with everclear to make tincture as previously stated to make tincture.

i've made hard candy caramel and butterscotch. It shouldn't be too difficult to incorporate concentrates, as they already have fat content.

JollyRancher type suckers are different.

Do all concentrates need to be decarbed prior to infusing (I use coconut oil)?

Someone recently gave me some wax "ABV", which I assume would be pre-decarbed like flower ABV. It did quickly dissolve in hot oil.

I like wax reclaim in eatables ;)

I heated up maybe 1/4 cup of coconut oil and dropped in the entire silicon container of dark brown reclaim (about 1g scraped from the inside of a tool). Stirred it around a little and all of the reclaim just dissolved right into the oil. Took about 30 seconds.

That was some super strong oil! I'd say that wax reclaim is about as strong as oil made from flowers - which was kinda surprising to me.

But back to the original post, which is a good question. So what would I have to do to make hard candies?

If they are all just made from sugar and water, how do we incorporate a fat-based oil?

some candy recipes can hold a bit of oil before it really starts to interfere with consistency. it's not very much, though, for things like hard candy. tincture is another option if you want hard candy.

I would have just added your reclaim (which had already been decarbed via vaping and just added it in with anything that would dissolve it like when it's hot

I like the tincture Idea, or a two part candy where the filling is medicated, because it could be cooked at a lower temperature.

I put a couple of squirts of tincture into some chocolate a couple of weeks ago. A friend was going to get his mm prescription, and hadn't tried mm since the 70s, so I gave him a care package of some muffins and chocos. So as I was saying 'those are pretty strong' he put 4 in his head. It was too late to say anything, but his day was supposed to be helping with a garden. He sat on a garden chair, woke up at home at 10 pm, had a sandwich and went back to bed. But totally pain free, even after sleeping on a lawn chair (try that in your late 50s with arthritis :)

PS the choco recipe is simple:
1 part cocoa powder
1 part melted cocobudder (already infused)
1/2 part maple syrup or other liquid sweetener. Agave maybe?
a couple of drops of Vanilla, or liquid Stevia
And I've heard that 1/2 teaspoon of instant coffee will also help your flavours...
Put in some tincture. As much as you think you'd like... and I dunno how strong yours is.
Stir liker mad, pour into something. I have some chocolate bar molds made of silicone that work great. I also had a pan with crushed nuts in it, and poured the leftover in that for bark.

I used 5 droppers full for tincture for this amount of ingredients, and it knocked bucky on his butt. YMMV :)

Mrs P made some caramels today out of some wax we had. I scooped out a couple of globs from our dish, we winterized it for two days, strained out the nastiness and evaporated it back to solid and then she mixed it in with the butter. There is a SLIGHT (VERY slight) weed taste right at the beginning when you chew it but for the most part, its one of the better edibles Ive had. We split one.. its been about an hour and I think these are REALLY going to be strong.. should be an interesting night.

We didnt use any particular cannabis specific recipe. She found one that didnt require a candy thermometer and went for it. She just infused the butter ahead of time.

Edibles are really peaking her interest.. I suspect she's going to have some stellar recipes before long.

@PoopMachine - I hate to ask but I'd like a recipe that doesn't need a thermometer! I have sludge, strong cocbudder, and a cup of tinc just waiting to get used :)

So the same friend wants to use some wax concentrate directly to make some edibles, and my question comes back - does wax need to be decarbed before mixing it into an edible oil? (Assume that the oil will only be heated for a very short time). I guess what I am essentially asking is - can you eat straight wax and get THC without decarbing first?

Depends on the process by which the oil is processed. But I have tried to skip the decarb step and it was not potent at all. I would definitely decarb the oil! It is very easy to see when it's done. Also decarbing past the peak point of decarb will create heavy effects. Under decarb tends to create more sedative bit it's all strain dependant and other variables depending on quality of the oil.

If I heated the coconut oil with the wax on a dbl-boiler for an hour, would that decarb the wax?

How do you know it's done decarbing?

Working with the ABV-wax was easy - it just dissolved in the warm coconut oil - and it made killer chocolates :). If I can do this right, I'd imagine that using "unused" wax would be much stronger...

TIA !

I have had abv wax that is probably just as strong as the starting wax so it all depends on the strength to begin with. But if you want to maximize potency you will need to decarb. I usually have to decarb from 30 to 60 minutes or more on a double boiler since it keeps the temp lower. So you closely look for bubbles starting to form everywhere as it gets to temp then it will subside proetty suddenly when it is at the peak. You are good at this point. Also a good portion of the terps and smells will be lost at the this point so that is usally also a god indicator.

Spectacular! This is exactly what I needed to know. It's what I was planning on doing, but I was a bit hesitant since it's not my wax I'd be experimenting with :D

Much appreciated info!

It depends. How nearby are you ;)
My last batch of rice crispy squares was really fun - I'd try another batch any time.

Here you go.

http://lecremedelacrumb.com/2014/09/easy-soft-caramels-no-candy-thermometer-required.html

I had given up on this caramel.. it kind of leveled off but now its kicking back in. Thinking it was about done, I went upstairs and had a 10mg gummy. Gonna be a VERY interesting night when that kicks in.
I tried this recipe this past weekend and it worked out great!
I've grown tired of making brownies and needed something more "portable", and with my very limited baking skills these caramels was right up my alley.

They are super easy to make and came out tasting pretty good!
I cut the batch into 16 pieces and ate one during the afternoon and a couple of hours later I was waaaaayyyy too high for my liking:D
Lesson learned (once again?), always start small with new edibles.

Thanks for the recipe @PoopMachine!

Id love to over-edible. I dont believe its possible for me. When everyone else is eating 1/2 a carmel, Im eating 2 and not getting a whole lot. My tolerance is ridiculous.

Glad the recipe worked out for you! She made some more with a different recipe and they were really good as well but not as solid at room temperature.

Did you winterize?
