i have an old ben & jerry's recipe book somewhere that I'll have to dig out for some ideas/ratios.

probably a matter of simmering the (water cured?) herb in the cream base and using that to freeze.

going to have to borrow mom's ice cream maker attachment for the mangler and get right on that :brow: :p

Heat herb to decarboxylize (grind and heat in oven at 325 for about 5 mins), use vanilla extract to extract the active ingredients and then use that vanilla extract to make your ice cream.

wow, it would take a lot of vanilla extract, that would cost a fortune!

I say if you want to do the alcohol extraction, use everclear, evap it down to tar and then reconstitute it with the required amount of vanilla extract. All vanilla extract is is grain alcohol and vanilla absolute anyway, they just jack up the price and sell it in wee bottles.

I think it would be easier to just steep the herb in the cream base along with whatever flavorings - a few vanilla beans thrown in while steeping it would give it incredible dimension to the flavor.

right,

just add the herb to a double boiler and add it to milk or cream

simmer on low stiring often to prevent curdling

strain and add to ice cream recipe

the herb milk recipe ratio is about 1oz of trim, or abv to 2 cups milk

this will make it pretty strong

if using herb use about half as much
