over medium is my preference but as long as its cooked some im eating, if its real runny i cut out all the white and eat the yoke on its own, eggsplosion. my favorite way to eat an egg is inside a buttered and jellied biscuit with a piece of bacon.

have just enough chickens that we never have to buy eggs...always fresh always delicious.

deviled eggs stand no chance near me.

I tried the sous vide eggs and can't get them right. Can you give me a temp setting and duration?

Here is something I bet most haven't tried? It is an old family recipe, or maybe it is a common Asian recipe? I don't know... but give it a shot! you might like it :)

First... start steaming a serving of short grain rice. The typical rice you find at a Chinese restaurant. If you don't have a rice cooker.... get one, they're awesome!

While the rice is cooking...

I like to mince a couple pieces of garlic, and get that going in a little olive oil. Just before the garlic starts browning, I will add an egg or two and let that side cook until I can easily give it a quick flip and sear the other side while trying not to break the yolk. (Any over easy egg works for this recipe, I just like garlic.)

Take the eggs, and set them to the side. Cook up a couple pieces of bacon, or preferably, have a few pieces cooked on the crispier side and cooled off a bit, so that they are easy to crumble.

Take finished rice, put it in a bowl.

Add bacon, crumble over rice if you like.

Add the two over easy eggs.

Add soy sauce (Just a few dashes)

Add ketchup (Just a few squirts)

Start mixing it all up, you want the yolks to run into the hot steaming rice... this is the best part!

Taste it...

Likely add a bit more soy sauce and ketchup to achieve preferred concentration. Or maybe not, but it's always easier to err on adding less at first before adding more, if you know what I mean!

Prepare to enjoy something amazing!

I need my eggs and love them over easy but I have to be careful with them or else they take it out on me.

Good huevos rancheros (sunny side up on tortillas with beans, rice and salsa) are one of my favorites. The kind you get at an average Mexican restaurant probably won't due. Get them at a place where Mexicans eat. Or make them at home.

Anyone been to Spain and had 'arroz a la cubana?' A bed of steamed white rice topped by a hot tomato sauce and a fried egg. And get this. A steamed banana, split in two.

Sounds and looks questionable but pretty darn good.

I know a lot of you like over easy eggs. I am not here to berate you or call your tastes gross. I simply cannot stand eggs cooked like this. To me, a proper egg has a hardened yolk and the whites are solid. I am able to put my fork through the yolk and it stays together, not break apart and liquefy all over my plate. Am I alone?
I wish you all the very best in your search for a kindred spirit, my friend.
